None of the south indian celebrations feel complete without payasam, it maybe Parippu (dal) payasam, semiya (vermicelli) payasam, gothambu (broken wheat) payasam and so on. Here let's take a look at how to make bamboo rice payasam.
- Mulayari / Bamboo rice 1 cups
- Jaggery 300 gms
- Thin coconut milk 3 cups
- Thick coconut milk 1 cups
- Cardamom powder 1/2 tsp
- Sliced coconut 3 tbsp
- Cashew nuts 8-10 nos
- Raisins 10-12 nos
- Ghee 2 tbsp
Wash and soak the bamboo rice in water for about 8-10 hours (soak it overnight)
Pressure cook it by adding 2-3 cups of water for 5-6 whistles until it turns soft.
Take a pan and melt the jaggery on low flame adding 1 cup of water, strain it and keep it aside.
When pressure releases, open the cooker and add the jaggery syrup and mix well.
Add thin coconut milk to this mix and stir well and cook till the payasam thickens and keep stirring in between.
Then add thick coconut milk and cardamom powder, cook in low flame for 2 minutes.
Heat ghee in a small pan and fry sliced coconut, cashew nuts and raisins till it turns golden brown.
Add this to the payasam and mix well. Serve the payasam hot for better taste.
